Grilled Spring Pizza

Tonight seemed like a perfect night to grill a pizza. We had plenty of fresh springtime, pizza-like ingredients in the fridge, several tasty cheeses, and some pizza dough waiting to be used.

Here is what I used for toppings:

A few beautiful asparagus stalks, cut thinly on the bias, and lightly steamed
Red onion, finely sliced
Grilled chicken, thinly sliced
Grape tomatoes, cut in half
A few fresh oregano leaves
Cambozola, chevre, and Jarlsberg cheese
A little kosher salt and freshly ground black pepper

Here is the method:

Prepare your favorite pizza dough recipe(I cheated and used Trader Joe's herb pizza dough). Work it into a round and place on grill over medium low heat. Lightly grill one side and remove from gill. Brush the grilled side with a little olive oil (or you could use a fresh tomato sauce, or pesto, or...) then put your toppings on. Return to the grill to finish cooking the crust and melt the cheese.

After the pizza was done grilling, I topped the whole thing off with a bright, fresh mix of baby lettuce, pea shoots, and chives, dressed in a little olive oil, balsamic vinegar, and salt and pepper. I also put some shavings of Dunbarton Blue (and incredible blue-veined cheddar from Roelli Cheese Haus in Wisconsin) on top and drizzled a little more olive oil over the whole thing.
Voila! Very tasty, and really, there are endless variations, which is what I love about pizza. It's a wonderful way to use up some produce and extra cheese.

First day at the market

Yesterday, May 14th, was our first day as a vendor at the Midtown Farmers' Market. We are so happy to be a part of this market. It has a really cool, eclectic vibe with a nice mix of produce vendors, artisans and amazing food stands.

The weather was less than ideal, however it was still a good experience. We were impressed with the number of people that braved the conditions in order to visit the market. So far, it looks like next week will be much nicer and we are excited to meet more people! Stop by and say 'hi' if you're at the market!

Here are a few pictures of our stand this week.

One a side note:
We started more seeds yesterday.  Another round of peppers and some neat varieties of tomatoes.  The first batch of seeds that were sown on the 19th of January are now up and growing nicely.  I will post some pictures this week.
